If you're looking for the ultimate quick but wholesome meal with Mediterranean flavours, this vegetarian Falafel Bowl recipe comes together in just 10 minutes. Using the shortcuts of microwave rice and store-bought falafels, the dish also features baby spinach, cucumber, grape (baby roma/plum) tomatoes, chickpeas, feta, olives and hummus.
Ingredients
- 250 g brown rice medley microwave pouch
- 6 falafel balls
- 50 g baby spinach leaves
- 1 small cucumber, sliced
- 75 g grape (baby roma/plum) tomatoes
- 400 g canned chickpeas
- 35 g crumbled feta
- 30 g finely sliced red onion
- 45 g pitted kalamata olives
- 4 tbsp beetroot (beet) hummus (or substitute with regular hummus)
- Lemon wedges and olive oil, to serve
Instructions
- Heat the rice and falafels – Heat the brown rice medley and falafel balls as per the packet instructions.
- Assemble – Divide all ingredients across two bowls.
- Serve – Finish with a squeeze of lemon juice and a drizzle of olive oil.
